Turkey Tacos with Cranberry Salsa

BC-LogoHere is the latest addition to our cooking library.  Wonder what to do with left over turkey from Thanksgiving or anytime?  Here is a great idea.

Turkey Tacos with Cranberry Salsa

3 pound of smoked turkey
1 package of tortillas
1 bag fresh Ocean Spray Cranberries
1 Large sweet onion
1 large bunch cilantro
2 jalapenos (de-seeded for the non-Texas version!)
4 TBLS Apple Cider vinegar
4 TBLS sugar
1 tsp salt
Squeeze of fresh lime juice
Salt to taste
1cup chopped toasted pecans

Pulse everything BUT pecans, turkey and tortillas in food processor until coarsely chopped. Salt to taste. Let sit 30 minutes.
Put warm pulled turkey in tortillas and fold in pecans right before serving.
