JACKSONVILLE, Ill., May 24, 2012 –- It’s truly rib ticklin’ news. A Jacksonville caterer – Twyford BBQ and Catering – is pleased to announce that it placed seventh in the rib category out of 121 teams that competed at the world barbecue championship at Memphis in May.

Cooking Christmas dinner is one of the last trials of the holidays.
The gifts have been found, bought, wrapped and opened, and receipts have been found for the ones to be taken back on Dec. 26.

We have pretty well finished up Twyford BBQ & Catering World Headquarters and Educational Complex. We have a little bit of work left to do but not much. It is working well for us and if you are ever out our way, stop in we are usually around.
We are heading out to one of the best BBQ contest in the country. It is put on by Mike Mills and his crew at 17th Street Bar & Grill. It is one of the few dual-sanctioned contest which means it has both KCBS and MBN or MIM competitions. We are going to compete in both contest and we are looking forward to it. Make sure and check out the events for Saturday under “Live Music” I will be officiating.
General food safety tips to keep you and your guests healthy this Thanksgiving.
- Thaw your turkey in the refrigerator, microwave or submerged in a sink (change the water every half hour) for maximum safety.
- Use soap and water to wash all places that touched raw turkey.
- Roast the turkey until the temperature taken at the thickest part of the thigh reaches 180 degrees F.
- Keep cold foods cold, and hot foods hot. If dinner is delayed make sure that foods are kept at temperatures below 40 degrees or above 140 degrees.
- Enjoy dinner, but don’t forget to refrigerate leftovers within two hours.
- You must eat leftovers within 2-4 days, freeze them, or throw them away.
We have formed a partnership with the Certified Hereford Beef Program and have been providing our customers with this top quality beef. Marla has a loin before we sliced it and on the other side is the finished product in our cooler. These have turned out better than any others we have tried.

Jacksonville’s noted barbecue master is making his prime-time debut tonight on a new reality show.
The U.S. version of “MasterChef,” hosted by the razor-tongued chef and star of “Hell’s Kitchen,” Gordon Ramsay, premieres at 8 p.m. today on the Fox network.
